The restaurant "Hsiang Hsing" was established in 1988 and is famous for its baked pancakes and hand-shaved noodles. It is a must-visit spot for the soldiers stationed in Kinmen. With a black-and-white sign and a light blue-green door, it exudes a nostalgic charm. The owner skillfully uses a knife to shave the dough into noodles, expertly dropping each piece into boiling water. The hand-shaved noodles are available from around noon until 7 or 8 PM, with flavors including beef noodle soup, beef soup noodles, and noodle with sesame sauce. The thick, handmade hand-shaved noodles are chewy and served in a delicious broth, making it the most popular noodle shop on the street. In addition to the signature hand-shaved beef noodles and various hand-shaved dishes, the restaurant also offers a variety of side dishes such as kelp, pig ears, and beef tripe. The baked pancakes come in both savory and sweet flavors, with the savory being filled with minced meat and scallions, and the sweet filled with sugar, all priced at NT$10, available from around noon until sold out.
