Hsiang Hsiang Small Eatery Introduction

Established in 1988, Hsiang Hsueng is most famous for its shaobing (savory baked flatbread) and dao xiao mian (knife-cut noodles). This eatery is a must-visit for the soldiers in Kinmen. With a white sign featuring black letters and a light blue-green door, it exudes an old-world charm. The owner skillfully uses a knife to cut the dough at the right angle, transforming it into noodles that are quickly submerged into boiling water. The dao xiao mian is sold from around noon until 7 or 8 PM, with flavors including beef noodles, beef soup noodles, and zha jiang noodles. The thick, handmade dao xiao mian is chewy and flavorful, making it the most popular noodle shop on the street. In addition to the signature beef dao xiao mian and its noodle series, various side dishes such as seaweed, pig's ears, and beef tripe are also offered. The shaobing comes in two flavors: savory with minced pork and scallions, and sweet with sugar, all priced at 10 NT dollars each, available from noon until sold out.
