Ganben Hall Cake Bakery Introduction
The first generation, Mr. Chen Ching-Chi, sold milk at a farm opposite Zhongyi Elementary School during the Japanese colonial period. The second generation, Mr. Chen Ben-Chang, the founder of Gan Ben Tang, opened a Japanese-style confectionery shop on Dashi Street in Tainan (now known as Section 1 of Minsheng Road) with Japanese chef Tan Gan-Xiu, naming it "Gan Ben Tang" after the two of them. The third generation was taken over by the second son, Mr. Chen Mao-Hsiung, who transformed Gan Ben Tang into a Western-style bakery. In 2006, the fourth generation, Mr. Chen Yi-Chang, along with his wife, Ms. Hsieh Yi-Lun, continued the operation. Mr. Chen Yi-Chang also studied wagashi-making techniques in Japan and worked at several five-star hotels in Taipei before carrying on the family business. He has integrated various skills from both Taiwan and Japan, and since taking over Gan Ben Tang, he has been dedicated to maintaining traditional flavors while continuously developing new products to adapt to contemporary trends, ensuring that this old shop embraces new horizons.
