In Tainan, there is a saying: "Even grasshoppers want to eat county-style fragrant pancakes." "County-style" refers to the area in front of the County Chenghuang Temple, and "county-style fragrant pancake" refers to the famous fragrant pancakes from "Jiulai Fa." These pancakes, which are hard to come by, may be something that country folks cannot afford, or it may imply that even if they could eat it, they wouldn't appreciate it. In any case, fragrant pancakes were considered a luxury food at that time. "Jiulai Fa" still insists on using a traditional wood-fired red brick oven to make cakes and rice cakes. Their signature products include white sugar crispy pancakes, sesame pancakes, crystal pancakes, and black and white sugar fragrant pancakes.
