A-Long Lu Wei Yi Mian Introduction
"A-Lung Yi Mian" was founded by Lin Yu-ti and his wife Lin Wu-jin-yu over forty years ago in Yan Shui, where they apprenticed with a Fuzhou master who made Yi Mian. It gained great popularity in the Yan Shui and Shan Hua areas. More than twenty years ago, they moved to Tainan, where it has also become beloved by the locals. The current operator is the second generation, Lin Han-long; having been influenced by his father since childhood, he took over the family business and innovated various vegetable-flavored Yi Mian, including red carrot noodles, green spinach noodles, and burdock noodles, all of which have been well received. The restaurant's specialty lies in its homemade Yi Mian that is not sold externally, emphasizing quality and maintaining a certain freshness. The soup base is made with lean meat, offering a light flavor that is easy to enjoy, and the use of MSG is moderate. As a result, customers often flock in during late-night hours, even more than during the day. The braised dishes are also homemade, with a fragrant sweetness and a non-greasy feel.
