A-Lung Mian Dishes Introduction

The founder of "A-Lung Yi Mian," Lin Yu-ti and his wife Lin Wu Jin-yu, lived in Yan Shui over forty years ago and apprenticed under a Fuzhou master, Cai Shi, who specialized in making Yi Mian. Their noodles received high praise in the Yan Shui and Shan Hua areas. Over twenty years ago, they moved to Tainan, where they also became beloved by the locals. The current operator is the second generation, Lin Han-long, who has taken on the family business influenced by his father since childhood. He has innovated various vegetable-flavored Yi Mian, including red radish noodles, green spinach noodles, and burdock noodles, which have all been very popular. Its specialty lies in the homemade Yi Mian that is not sold externally, focusing on quality and maintaining a certain freshness. The broth is based on lean meat, offering a light flavor that is easy to consume, with an appropriate amount of MSG; as a result, there tend to be more customers at night than during the day. The braised dishes are also homemade, featuring a sweet and fragrant taste without greasiness.
