Jiangchuan Braised Pork Rice Introduction
In Tainan's traditional market, there is a type of snack sold by a vendor called "fan zhuo" (in Taiwanese pronunciation). The characteristic of this "fan zhuo" is that a full table of dishes is displayed at the stall, and when you choose a dish you want, the owner serves you a portion in a small plate. The concept of the Taiwanese buffet developed from this, and this "fan zhuo"-style snack shop can be considered the ancestor of Taiwanese buffets. This shop, Jiangchuan Braised Pork Rice, has been in operation for over half a century and still maintains this traditional "fan zhuo" style of service. However, they are also adaptable; in addition to dining in the shop in the old-fashioned way, they offer take-out bento options as well.
