Jiangchuan Braised Pork Rice Introduction
In Tainan's traditional market, there is a snack sold by vendors called "fan zhuo" (in Taiwanese pronunciation). The characteristic of this "fan zhuo" is that a table full of dishes is displayed at the stall, and when you want to eat a particular dish, the owner serves you a portion in a small plate. The concept of the Taiwanese buffet developed from this idea, and this type of "fan zhuo" snack shop is considered the ancestor of the Taiwanese buffet. This shop, Jiangchuan Pork Rice, has been in business for over half a century and still operates in this traditional "fan zhuo" style. However, they are also adaptable; besides dining in the store using the old-fashioned method, they also offer take-out bento meals.
