Jiangchuan Braised Pork Rice Introduction

In Tainan's traditional market, there is a type of snack sold by vendors called "fan zhuo" (in Taiwanese pronunciation). The characteristic of this "fan zhuo" is that the stall displays a full table of dishes, and when you want to eat a certain dish, the owner serves you a portion in a small plate. This concept is the basis for Taiwanese buffet-style restaurants, and this type of "fan zhuo" snack shop is indeed the ancestor of Taiwanese buffets.
