Jiangchuan Braised Pork Rice Introduction
In Tainan's traditional market, there is a type of snack sold by a vendor called "Fan Zuo" (pronounced in Taiwanese). The characteristic of this "Fan Zuo" is that the stall showcases a full table of dishes, and when you want to eat a particular dish, the owner serves a portion in a small plate for you. This concept eventually evolved into the Taiwanese-style buffet. This "Fan Zuo" style snack shop is actually the ancestor of the Taiwanese buffet. Jiangchuan Braised Pork Rice, which has been in operation for over half a century, continues to maintain this traditional "Fan Zuo" method of operation.
