Hsia's Handmade Fish Noodles Introduction
Business Hours: 11:00 AM - 8:30 PM. Tainan's unique fish noodles capture the taste buds of many food enthusiasts with their fresh and sweet flavor. Although they are called noodles, they contain no flour. The main ingredient is the fish known as "dog mother fish," which was once discarded by the harbor people. After removing the bones, the fish meat is ground into a paste and continuously kneaded to achieve elasticity. Due to its moist texture, it is sprinkled with potato starch and then rolled out using a glass bottle, forming a thin sheet that is cut into fine strips. The excess potato starch is removed, resulting in fish noodles made purely from fish paste.
