Xia Family Handmade Fish Noodles Introduction
Business Hours: 11:00 AM - 8:30 PM. Tainan's unique fish noodles capture the taste buds of many gourmets with their fresh and sweet flavor derived from fish. Although they are called noodles, they contain no flour; the main ingredient comes from the commonly discarded fish, the female mullet. The fish meat is deboned and then ground into fish paste, which is repeatedly kneaded to achieve elasticity. Because it is moister, it is dusted with tapioca starch, then pressed into thin sheets using a glass bottle as a rolling pin, cut into thin strips, and any excess tapioca starch is removed, resulting in fish noodles made entirely from fish paste.
