Xia's Handmade Fish Noodles Introduction
Business Hours: 11:00 AM - 8:30 PM. Tainan's unique fish noodles capture the taste buds of many food lovers with their fresh and sweet seafood flavor. Although they are called noodles, no flour is added. The main ingredient comes from fish that were once discarded by harbor fishermen, known as the female mullet. The fish meat is deboned and made into fish paste by repeatedly kneading it to achieve elasticity. Due to its moisture, it is sprinkled with tapioca flour and rolled thinly using a glass bottle, then cut into fine strips. After removing the excess tapioca flour, the result is fish noodles made purely from fish paste.
