Although called noodles, they do not contain any flour; the main ingredient comes from the dogfish, which was once discarded by harbor workers. The fish meat is deboned and minced into a fish paste, which is continuously kneaded to achieve a chewy texture. Due to its moist consistency, cornstarch is sprinkled on it, and a glass bottle is used as a rolling pin to flatten it into a thin sheet. It is then cut into fine strips and excess cornstarch is removed, resulting in pure fish noodles made from fish paste.
