Ye's Rice Vermicelli with Cuttlefish Introduction
The first "Small Squid Rice Noodles" in Tainan was established by Yeh Shui-Long at the "Great Market" in Old Tainan. It is currently managed by the third generation, Yeh Tien-Shun and his daughter-in-law, Jin-Feng. The restaurant has a history of over 60 years. Unlike regular rice noodles, we use Tainan's unique "thick rice noodles," made from brown rice, which is gentle on the stomach! The appearance is similar to rice toddlers, but the texture is smooth and elastic without being mushy. The squid is sourced from Indonesia, featuring thick and delicious meat with a chewy texture. It is complemented by a broth made from boiled cuttlefish with a hint of finely chopped celery and a touch of pepper, offering a refreshing sweetness. No artificial MSG or sugar is added, so you can enjoy it with peace of mind!
