Ye Family Small Squid Rice Noodles Introduction
The earliest "Small Squid Rice Noodles" in Tainan was founded by Ye Shui-Long at the "Dachai Market" in Old Tainan. It is now run by the third generation, Ye Tian-Shun, and his daughter-in-law, Jin-Feng, and has a history of over 60 years. Unlike ordinary rice noodles, we use Tainan's unique "thick rice noodles," made from brown rice, which is gentle on the stomach! They look like traditional rice noodles but have a smooth and chewy texture without being mushy. The small squid is sourced from Indonesia and features thick and tender meat with a bouncy and chewy bite. Served with a broth made from cooked cuttlefish and a sprinkle of finely chopped celery and a hint of pepper, it is refreshing and subtly sweet. We do not add any artificial MSG or sugar, so please enjoy it with peace of mind!
