Ye's Family Stir-fried Rice Vermicelli Introduction

The first and oldest "Squid Noodle" shop in Tainan was established by Ye Shui-long in the "Da Cai Market" of old Tainan. It has been run for over 60 years by the third generation, Ye Tian-shun and his daughter-in-law Jin-feng. Unlike regular noodles, we use a unique type of "coarse rice noodle" special to Tainan, made from brown rice, which is gentle on the stomach! Its appearance is similar to rice vermicelli, but the texture is smooth and springy, not mushy. For the squid, we use medium squid imported from Indonesia, which is thick, fresh, and has a chewy texture. It is served with a broth made from cooked small squid and finely chopped celery, with a hint of pepper for a refreshing sweetness. We do not add any artificial MSG or sugar, so you can enjoy it with peace of mind!
