Tainan's first "Small Squid Rice Noodles" was founded by Ye Shui-Long in the "Dachai Market" of Old Tainan. Now, it is managed by the third generation, Ye Tien-Shun and his daughter-in-law, Jin-Feng, and has a history of over 60 years. Unlike regular rice noodles, we use Tainan's unique "thick rice noodles," which are made from brown rice, ensuring they are gentle on the stomach! They resemble rice vermicelli in appearance but are smooth and chewy without being mushy. The squid is sourced from Indonesian deep-sea imports, featuring thick and fresh meat with a springy texture. It is complemented by a broth made from boiled small squids and finely chopped celery, with a touch of pepper, offering a refreshing sweetness. Rest assured, we do not add any artificial MSG or sugar!
