In an affordable café, the exquisite hand-brewed coffee marks the beginning of Huang Huixue's journey after a devastating fire destroyed her home, leaving her with nothing. To help her regain her spirit and find a purpose in life, her friends suggested opening a coffee shop, which became her opportunity to connect with coffee and reinforced her Christian belief that God opened another window for her. "I find coffee fascinating and gradually have developed insights," says Huang Huixue, revealing her strong interest in studying coffee. Indeed, her pride in the cold drip coffee was born from this exploration – lacking the funds for expensive equipment, she utilized a drip contraption based on the same principle, mixing different drip rates and water qualities to create cups of uniquely flavored cold drip coffee. "Pairing it with our handmade banana brownie or passion fruit pound cake is a great pleasure," Huang Huixue confidently states. Besides cold drip coffee, the café also specializes in "hand-brewed coffee," where the equipment is brought directly to the customer's table for fresh brewing, tailored to the guest's preferred strength using various methods to present the coffee's flavor. The coffee beans used in the shop are also roasted in-house, meticulously selected by Huixue. She is also the first cup taster from Chiayi, and due to her love for coffee and a natural palate, she passed a five-day examination in one attempt after self-learning, experimenting, and humbly seeking advice, which surprised her friends and family and further solidified her determination to run a coffee shop. This journey from nothing to something is not achieved overnight; overcoming setbacks has fueled her drive, much like her initial intention to provide professional and delicious coffee in Chiayi.
