In an affordable café, Huang Hui-Hsueh found her calling in specialty hand-brewed coffee after a devastating fire left her homeless. With the support of friends who encouraged her to start a coffee shop to uplift her spirits, she began her journey into the world of coffee, firmly believing that it was God who opened a new window for her. "I find coffee fascinating, and I gradually developed my understanding of it," she expresses her deep interest in coffee research. Indeed, her pride and joy, the iced drip coffee, was born from this playful exploration—unable to afford expensive equipment, she used a drip apparatus based on the same principles, experimenting with different dripping speeds and water qualities to create uniquely flavored iced drip coffee. "Pairing it with the handmade banana brownie or passion fruit pound cake in the shop is a great delight," Huang confidently shared. In addition to iced drip coffee, the café also specializes in "hand-brewed coffee," where equipment is brought to the customer's table for a fresh brewing experience, using different techniques depending on the guest's preferred strength to showcase the coffee's flavor. The coffee beans used are roasted in-house, carefully selected by Hui-Hsueh herself. Huang is also the first cup tester in Chiayi, and her love for coffee combined with her natural palate led her to self-study, explore, and seek advice. Remarkably, she passed her challenging five-day examination on the first try, surprising her friends and family and solidifying her determination to run a coffee shop. This journey from nothing to something was not instantaneous; setbacks and failures only fueled her determination to provide professional and delicious coffee in Chiayi.
