In an affordable café, the exquisite hand-brewed coffee marked the beginning of Huang Huixue's journey with coffee after a devastating fire burned down her home, leaving her with nothing. To help her regain her spirit and provide a sense of purpose, her friends suggested opening a coffee shop, which became her opportunity to connect with coffee and reinforced her Christian belief that God had opened another window for her. "I find coffee very interesting, and I've gradually gained insights into it," Huang Huixue's words reveal her strong interest in studying coffee. Indeed, her pride and joy, the cold brew coffee, was developed through experimentation—due to budget constraints, she opted for a drip method using similar principles, combining different drip speeds and water qualities to create distinct flavors in each cup of cold brew. "Pairing it with our homemade banana brownie or passion fruit pound cake is a great delight," Huang Huixue confidently states. In addition to cold brew, the shop also specializes in "hand-brewed coffee," offering fresh brewing service right at the customer's table, using different techniques to present the coffee flavor according to the customer's preferred strength. The coffee beans used at the shop are also roasted in-house, meticulously selected by Huixue herself. Huang Huixue is also the first cup taster in Chiayi. With a deep love for coffee and a natural palate, she self-studied, explored, and humbly sought advice, ultimately passing a rigorous five-day examination on her first attempt—a remarkable achievement that surprised family and friends alike, solidifying her determination to run a coffee shop. This journey from nothing to something was not achieved overnight; the setbacks and failures only fueled her drive, mirroring her initial intention to offer professional and delicious coffee in Chiayi.
