In an affordable café, the prestigious hand-brewed coffee became a turning point in Huang Hui-Xue's life after a devastating fire burned down her home, leaving her with nothing. To help her regain her footing and find purpose, friends suggested that she open a coffee shop, which sparked her journey into the world of coffee and reinforced her Christian belief that God had opened another window for her. "I find coffee fascinating and gradually developed my skills," Huang Hui-Xue expressed, highlighting her strong interest in coffee research. Indeed, her pride lies in the cold brew coffee she created through experimentation—using an alternative dropper due to her inability to afford expensive tools, she explored various drip speeds and water qualities to craft unique flavors for her cold brew. "Pairing it with our handmade banana brownies or passion fruit pound cake is a great delight," she confidently stated. In addition to cold brew, the café also specializes in hand-brewed coffee, which is made right at the customer's table, offering fresh brew service. Different brewing methods are used based on the customer's preferred strength, showcasing the coffee's taste. The coffee beans used in the shop are roasted in-house, carefully selected by Hui-Xue herself. Huang Hui-Xue is also the first cup tester in Chiayi, and through her passion for coffee and her innate palate, she self-studied and learned diligently, eventually passing the rigorous five-day examination on her first try—a rare achievement that surprised her friends and family, further solidifying her resolve to run a coffee shop. This journey from nothing to something was not without its challenges; failures only fueled her determination, aligning with her mission to offer professional and delightful coffee in Chiayi.
