In an affordable café, the prestigious hand-brewed coffee began when a fire burned down Huang Huixue's home, leaving her with nothing. To help her regain her spirits and find purpose in life, her friends suggested opening a coffee shop, which marked the beginning of her journey with coffee. As a Christian, she firmly believes that it was God who opened another window for her. "I find coffee very enjoyable, and I've gradually developed insights into it," she expresses her strong interest in studying coffee. Indeed, her most proud creation, the cold brew coffee, was developed through this "play"—due to budget constraints, she used a drip system based on the same principle, adjusting drip speed and water quality to craft uniquely flavored cold brew coffee. "Pairing it with our homemade banana brownies or passionfruit pound cake is a great delight," Huang Huixue confidently states. In addition to cold brew coffee, the shop also features "hand-brewed coffee," where the equipment is brought to the customer's table for fresh brewing, and different techniques are employed based on the customer's preferred strength to showcase the coffee's flavor. The coffee beans used in the shop are also roasted in-house, meticulously selected by Huixue herself. Huang Huixue is also the first cup taster in Chiayi. Driven by her love for coffee and her innate taste buds, she successfully passed a rigorous five-day examination on her first attempt after a journey of self-study, exploration, and humility in seeking guidance. This was a remarkable achievement that surprised her friends and family and further solidified her determination to run a coffee shop. This journey from nothing to something was not easy; the setbacks and failures only fueled her motivation, just as she intends to offer her customers: professional, delicious coffee in Chiayi.
