Although white shrimp grown in pure seawater grow slower than those raised in freshwater, they offer a firmer and more elastic texture, avoiding a mealy and unsubstantial mouthfeel. After over ten years of improvements, the ponds are designed with a hard bottom, providing a cleaner growing environment compared to the mixed farming methods in the sandy soil ponds of the western region. Additionally, the changing water quality in the ponds is closely monitored day and night, which is a key secret for shrimp farming.
