Shiding Mago Sausage Introduction
Taipei's back garden—Shiding District. In the summer of 2004, while Xu Shihong, the founder of Shiding Matsu Sausage, was deeply engrossed in experimenting with various sausage recipes, a moment of distraction led to an accidental incident. He unintentionally knocked over powdered Matsu spice, which had been placed nearby, spilling it into the sausage mixture that was already seasoned but not yet to his satisfaction. Although boss Xu was quite frustrated, he couldn't bear to waste the ingredients and, with a sense of unease, decided to turn it into a finished product for his family’s dinner. To his surprise, this accidental move resulted in a unique product with extraordinary flavor—the Matsu sausage, which has a tender yet robust texture and a refreshing coolness, akin to the delightful sensation of enjoying ice cream in summer. The Matsu sausage truly is a beautiful mistake! This unexpected turn of events introduced everyone to a new concept of healthy sausages, and thus the "Shiding Matsu Sausage" was born.
