Jingxuan Introduction
A small eatery tucked away in an alley, specializing in ramen and rice bowls. The restaurant uses high-quality rice sourced from eastern Taiwan, and during cooking, binchotan charcoal is added to the rice cooker. This not only enhances the rice's aroma and chewiness but also helps remove pesticide residues, eliminate chlorine, and add natural minerals. The ramen is crafted in sunny Pingtung, boasting a texture that is not mushy and pleasantly elastic. In addition to rice bowls and ramen, the chef thoughtfully designed the "Vitality Meal," a smaller version that combines both a rice bowl and ramen, offering a dual delight in one meal, making it a popular dish in the restaurant. Ramen (set) starts at NT$140, rice bowl (set) starts at NT$140, and the Vitality Meal (set) starts at NT$170. These dishes are prepared using fresh ingredients obtained that morning from the market, along with seasonal local produce. The chef decides on these dishes based on the ingredients available that day, with limited quantities, reflecting the unique bond between the diners and the food. The blackboard menu changes frequently, adding variety and richness to the offerings while satisfying customers' cravings for new taste experiences.
