Jing Xuan Introduction

A small eatery tucked away in an alley, specializing in ramen and rice bowls. We use high-quality local rice sourced from Eastern Taiwan, and during cooking, we place Binchotan charcoal in the rice cooker. This not only enhances the aroma and chewiness of the rice but also removes pesticide residues, eliminates chlorine, and adds natural minerals. The ramen is produced in sunny Pingtung, offering a firm and elastic texture. In addition to rice bowls and ramen, the chef thoughtfully designed the "Vitality Meal," a smaller version combining both rice bowl and ramen, providing a dual experience in one dish. This has become a popular item on the menu. Ramen (set) starts at NT$140, rice bowls (set) start at NT$140, and the Vitality Meal (set) starts at NT$170. Blackboard specials - The limited daily offerings listed on the blackboard serve as a reference menu for regular patrons. These dishes are prepared by the chef using fresh ingredients purchased from the market in the morning and local seasonal products. The chef determines these dishes based on the available ingredients for the day, creating a limited quantity that reflects the unique connection between people and food, which cannot be forced. The blackboard menu is updated frequently, adding richness and variability to the offerings while satisfying customers' cravings for novelty.
