Jiangxuan Introduction
A small eatery nestled in an alley, specializing in ramen and rice bowls. It uses high-quality rice sourced from eastern Taiwan, and during the cooking process, charcoal is added to the rice cooker. This not only enhances the fragrance and chewiness of the rice but also helps remove pesticide residues, eliminates chlorine, and adds natural minerals. The ramen is crafted in sunny Pingtung, offering a firm, elastic texture. In addition to rice bowls and ramen, the chef has thoughtfully designed a "Vitality Meal," which is a smaller version combining both rice bowls and ramen, providing a dual treat in one dish—this is among the restaurant's most popular offerings. Ramen (set meal) starts at NT$140, rice bowls (set meal) start at NT$140, and the Vitality Meal (set) starts at NT$170. Blackboard specials — a limited daily selection displayed on the blackboard serves as a reference menu for regulars. These dishes are prepared using fresh ingredients and seasonal local produce that the chef handpicks from the market early in the morning. The chef decides the menu based on the ingredients available that day; thus, the quantities are limited, symbolizing the depth of connection between people and food, which cannot be forced. The blackboard menu changes regularly, adding variety and richness to the offerings and satisfying customers' cravings for new experiences.
